Ethel M Chocolate Factory & Botanical Cactus Garden

Ethel M is the Mars family's boutique chocolate operation — founded in 1981 in Henderson by Forrest Mars Sr as a retirement project after he'd built the world's largest candy company. The factory is a genuine working chocolatier producing premium boxed chocolates, and Mars opened it for free public self-guided tours because that's just how the family operates. The four-acre Botanical Cactus Garden next door holds 300 species of Southern Nevada and Sonoran Desert cactus — the largest such collection in the state — and every November through January it gets wrapped in half a million LED lights.

Park free at 2 Cactus Garden Drive. The self-guided factory walk runs along a glass-walled corridor overlooking the production floor: enrobing machines, cooling tunnels, hand-decoration stations. Signs explain each stage; workers wave. The tour ends at the sampling counter (free single truffle) and the retail shop where you inevitably buy a box. The cactus garden loops around the factory building — paved paths, benches, labelled species, a small water feature and, in December, the light display which becomes one of the region's biggest free family attractions.

Come between mid-November and January 6 for the lights (5pm to 10pm nightly). The rest of the year, mornings before the desert heat are best. Combine with lunch on Water Street in Henderson (7 minutes north) or the newer Green Valley shopping. Weekends in December get very busy for the lights — arrive by 4:30pm or after 8pm. Skip midday July-September when factory tours are fine but the outdoor garden bakes. The gift shop's dark-chocolate lemon truffles are the best souvenir in Nevada.

• Bring a jacket for December light-display evenings — Henderson at 8pm in winter drops to 40°F.
• The gift shop's outlet corner discounts imperfect chocolates 40-60% — go straight there.
• Combine with the Clark County Museum on Boulder Highway (4 miles south) for a bigger Henderson afternoon.
